What Is Ube?

Ube is a purple yam (sweet potato) that is popular in the Philippines and other Asian countries and is often used in desserts.

It is also getting more popular and easier to find here in the US.

These days we tend to use “yam” and “sweet potato” interchangeably, but, technically speaking, ube is is actually a yam.

The starchy, purple vegetable is delicious and wonderful in desserts.

Purple Party!

Pretty purple fudge can be enjoyed any time you’d like, but can also be fun for a themed party.

A purple dessert is great for Mardi Gras, for a royal princess party or a mermaid or butterfly party.

The fudge can also be the purple part of a rainbow party.

It can, of course, be perfect for game day when you are cheering on your favorite purple team, such as the Minnesota Vikings or even your child’s team.

How to Make Light Purple Fudge

As written, the recipe makes a deep, dark purple fudge.

If you’d like a lighter purple fudge, you can substitute regular sweetened condensed milk for part of the ube sweetened condensed milk.

The fudge will still be good, but the ube flavor won’t be as strong.

Can I Use Milk Chocolate Chips Instead of White Chocolate Chips?

The taste of milk chocolate goes really well with the flavor of ube, so ube milk chocolate fudge is delicious.

However, when you mix brown chocolate with dark purple condensed milk, the fudge is very dark and not the same pretty purple color as in my photos.

Fudge Cooking Tip to Prevent Scorching

I love making all kinds of fudge, so have made it often.

It is easy to make, but you can’t rush it.

Keep the burner on low and stir frequently to keep it from scorching or getting a grainy texture.

For the first minute or so, you may be tempted to turn up the heat to speed up the process of melting the white chocolate chips.

Don’t.

Just let the white chocolate slowly melt on low heat and it will be creamy and thoroughly combined within a few minutes.

FAQs

Why is my 2 ingredient fudge not setting? ›

One possibility is that the ratio of ingredients may be off, resulting in a fudge that is too soft or runny. So make sure you measure your ingredients correctly. Another factor could be the quality of the ingredients used using low-quality chocolate or condensed milk may affect the setting process.

Is evaporated milk or condensed milk better for fudge? ›

Evaporated milk doesn't have sugar added. The sweetened condended milk is needed as no extra sugar is added to the fudge. If evaporated milk were used then the fudge would not be sweet enough and also would still be too soft unless the fudge is frozen.

What makes fudge taste like fudge? ›

Fudge typically contains sugar, butter or cream, milk or condensed milk, cocoa powder (or melted chocolate), flavoring such as vanilla extract or peppermint oil, and sometimes nuts or marshmallows for added texture.

Why is my fudge so gooey? ›

Fudge Didn't Set

If your fudge turned out super sticky, or it didn't set as it cooled, it probably never got hot enough. This mistake is super easy to avoid if you use a candy thermometer and cook the fudge to the temperature specified in the recipe (usually between 234 and 239°F).

How to fix fudge that won't set? ›

How can you fix soft fudge? Put it in a microwave safe bowl that is large enough that it won't boil over. Reheat it to the boiling point and cook for about 3 more minutes. Then you can beat some powdered sugar into it if this doesn't make it set.

What is the secret to good fudge? ›

How to Make Fudge. The trick to good homemade fudge is to cook the ingredients to the right temperature to form a sugar syrup, and cool the mixture properly so the texture of the fudge turns out smooth and firm, but soft enough to cut. Here's how to make fudge on your stovetop and in your microwave.

What happens if you use evaporated milk instead of sweetened condensed milk? ›

For the most part, if you find yourself without condensed milk on hand, you can substitute an equal amount of evaporated milk. The consistency will be the same, but since evaporated milk is unsweetened, you'll need to add sweetener to match the recipe's intended flavor profile or to suit your personal preference.

Why is condensed milk not advisable? ›

Evaporated milk has added sugar and carbohydrates which are very high, making sweetened condensed milk not healthy for nutritional intake for babies and children, Ali explained.

Why won't my condensed milk fudge set? ›

It sounds like your fudge simply wasn't heated enough. Fudge is basically a superconcentrated syrup, and it sets when sugar dissolved in the water (from the butter and milk) comes out of solution as the mixture cools and forms crystals.

When should you not make fudge? ›

Humidity can cause fudge to boil over in the pan or stay soft when set, so try to avoid working on humid days if at all possible. If waiting for a less humid day isn't feasible, you'll need to boil your fudge at a slightly higher temperature than usual — or just order some delicious fudge from Wockenfuss!

What is the secret to smooth fudge that is not gritty? ›

Once a seed crystal forms, it grows bigger and bigger as the fudge cools. A lot of big crystals in fudge makes it grainy. By letting the fudge cool without stirring, you avoid creating seed crystals.

What is the most popular flavor of fudge? ›

After years of testing recipes, we're pretty sure we have a handle on the most popular fudge flavors, but chocolate and cherry will always rank high on the list.

Why is my fudge like taffy? ›

If the fudge is very soft and slightly chewy then it is possible that it did not quite cook to soft ball stage and next time the mixture should be cooked to a slightly higher temperature (soft ball is 112-116c/235-240F and a sugar or candy thermometer can help).

Should I stir fudge while boiling? ›

Avoid Stirring Once the Mixture Comes to a Simmer

Why does my fudge turn into toffee? ›

If your fudge has a texture like soft toffee, it could be due to overcooking, using too much sugar or butter, or not cooking it to the right temperature.

Why hasn't my fudge harden? ›

The most common culprit behind unset fudge is inaccurate temperature control. If the sugar mixture hasn't reached the correct temperature, your fudge won't set. Ensure you use a reliable candy thermometer and follow temperature guidelines meticulously to achieve the desired consistency.

Why won't my 3 ingredient condensed milk fudge set? ›
